Low Carb Chicken and Dumplings - A Simple and Easy Keto Recipe
Welcome all! Papa G here. Today I presenta very simple and delicious recipe;
low carbohydrate chicken and dumplings. A recipethat is easy to make as it is delicious
to eat. With only seven and a half carbohydratesfor a large portion, it's a fantastic
low carbohydrate option. Let's get started...
We're going to need about a pound of cooked
chicken for our recipe. I like recipesthat are simple to make; so I opted to
pick up a rotisserie chicken from mylocal grocery store and cut out a lot of
time, and if possible, made this recipethat much easier. Use a nine by thirteen inch
baking dish and pour about 4 tablespoonsof melted, unsalted butter to the bottom.
Now evenly distribute the chicken to thedish. I like to add just a little bit
more flavor by seasoning the chickenhere I used my favorite, Paul Prudhomme's
poultry seasoning; or if you want, just alittle bit of salt pepper and garlic
powder mixed together. Next, we'll makeour dumplings. For this, we'll use Carbquik.
This will give us our dumplingsand help thicken our stock. Pour a cup of
Carbquik into a large mixing bowl andwhisk to remove any clumps. Add a little
water; and mix to combine. I find using myhands here the easiest method. Keep
folding and mixing until all themoisture is incorporated. Take the dough,
and with your fingers, pull and formbite-size pieces,
creating little dumplings. Place thedumplings on top of the chicken, leaving
a little bit of space between each one.Now we'll prepare our broth. Add two cups
of chicken stock to a medium mixing bowl. To our stock, we're going to add one ten
and a half ounce can of condensed creamof chicken soup. Add some ground black
pepper; and mix with a whisk untileverything is combined.
Pour the liquid mix over the top of thechicken and dumplings; go back over the
dish and gently press the dumplings intothe broth. Make sure that each dumpling
is either submerged or nicely coated. Now we'll place the dish in the center
of a preheated four hundred degree oven for aboutthirty-five minutes. You'll know it's done when
it's nice and bubbly, and it's turned anice golden brown. When it's cooled just a
bit, serve in a large bowl. Top with alittle dried parsley, and enjoy!
