Welcome all! Papa G here. Today Ipresent my low carbohydrate game day chili recipe.
When the weather cools down and thegridiron heats up, you know it's time for
chili. With just over seven grams ofcarbohydrates per serving, this recipe is a great
low carbohydrate option. Let's get started. Theseare the vegetables we'll be using...
One medium onion. Two jalapeno peppers and fourcloves of garlic. Dice all into small
pieces. Be sure to remove the seeds andmembranes from the jalapeno peppers
before chopping. For our spice mix we'llblend five and a half tablespoons of
chili powder; about two and a halfteaspoons of salt; some ground black
pepper; some cayenne pepper; about fourteaspoons of cumin; some dried oregano;
a little garlic powder; and about one and aquarter teaspoons of xanthan gum. Mix
everything with a whisk to fully combine.
To a large stock pot on medium-high heat,add about a tablespoon of extra virgin
olive oil. Add the chopped onions ,peppers,and garlic. Saute the vegetables for
about three to five minutes or until theonions and peppers soften. Add two pounds
of ground beef; mix and cook for anotherfive minutes or so until the ground beef
is about halfway cooked. Now we'll addthe spice blend we prepared earlier. Add
and stir in one tablespoon ofWorcestershire sauce and finish cooking
until the beef is fully cooked. Once thebeef is cooked, add one 28 ounce can of
crushed tomatoes. Give that a mix toincorporate. We'll finish off the
ingredients by adding three cups of beefstock. Mix until thoroughly combined. Now
we'll raise the heat to high and letcome to a small boil.
When our chili begins to boil, give it agood stir and reduce the heat to
medium low. Let cook uncovered for aboutan hour and a half to allow all the
flavors to come together and our chilito reduce and thicken. Now we're ready to serve.
Pour into a bowl; garnish with alittle cheddar cheese; a little sour
cream; some chopped green onions; andenjoy! There you have it folks! My
